Training Course
“Molecular Detection of Foodborne Diseases”

ICISE, Quy Nhon City, Binh Dinh province, Vietnam
11-12 December, 2022

Introduction

Foodborne diseases have become more common over time, resulting in major public health problems globally. Foodborne pathogens can be found in a variety of foods and it is critical to detect them in order to ensure a safe food supply and prevent foodborne diseases. The conventional methods used to detect foodborne pathogen are time consuming and laborious. As a result, a variety of methods have been developed for rapid detection of foodborne pathogens as it is required in many food analyses. Rapid detection methods can be categorized into nucleic acid-based, biosensor-based and immunological-based methods and their advantages are generally time-efficient, sensitive, specific and labor-saving. Among these approaches, real-time PCR is considered to be powerful tool for identification and quantification of foodborne pathogens. However, this assay is not suitable for less developed regions with limited access to a real-time PCR instrument that requires skilled professionals. An alternative approach so-called Loop mediated Isothermal Amplification (LAMP) has been recently established for rapid detection of foodborne diseases. This method is more specific, sensitive, cost effective and rapid than real-time PCR assays. Particularly, the assay performance can work directly with crude samples through simple visualization of reaction outcome that is feasible for on-site applications with restricted resources. The developments of rapid detection methods are vital in prevention and treatment of foodborne diseases.
